Mihiri's sugar, nut, dairy and egg free muesli bar recipe Recipe for Healthy Muesli Bars (Sugar-FREE, Dairy-FREE, Egg-FREE, Nut-FREE!!) Shared with the kind permission of Kelley Sheenan, Editor,Peppermint Magazine Nb. This recipe can be made gluten-free by using rice flour instead of wholemeal flour, and gluten-free oats. I love this recipe as it’s one you can take to day-care as it’s NUT-FREE. INGREDIENTS 2 bananas 1 cup chopped dates 1/2 cup boiling water 1tsp baking powder 2 cups oats 1 1/2 cornflakes or rice bubbles or cereal 1/2 cup dessicated coconut 3/4 cup raisins 1/2 cup wholemeal flour 1/3 cup olive oil 1/2 cup honey 2tsp vanilla OPTIONAL - 110gm fruit baby food (eg Organic berry & apple, or use more honey or some fruit juice) DIRECTIONS 1. Blend dates with water til smooth, then add baking powder and leave to sit for 5 mins 2. Mix together oil and honey (melt a little if necessary in pan or microwave) 3. Mash bananas and stir into oil and honey, along with date mixture & vanilla 4. Mix in all other ingredients 5. Press into a large baking dish or 2 medium-sized ones 6. Bake in pre-heated oven at 180degrees for 20-25minutes 7. When cool, cut into bars and store in air-tight container MAKES ALOT!!! I looked at this recipe because it said no sugar, but honey is a form of sugar even though it is a natural one.
If you say sugar free, then your recipe should be completely sugar free which this one isn't.
